Honey-Mustard Chicken

Yum! Yum! Time to share a delicious recipe. And it’s delicious. I just made it tonight (hahaha, so I could share a picture) and it’s all gone and I’m sad there were no leftovers. *starts to cry*

If you didn’t know, I’m releasing a new romantic suspense this Sunday, January 8, 2017, One Taste of You. One thing, maybe you noticed, that I like to do is share the recipes of the meals and/or goodies mentioned in my books. Well, in One Taste of You, Zeke’s mom makes this wonderful meal that includes honey-mustard chicken. So I’m gonna share it with you:)

Honey-Mustard Chicken

1/2 cup Dijon honey mustard

1/2 cup honey

3 tsp olive oil

1/2 small yellow onion

2 cloves garlic, minced

2-3 chicken breast

sprinkle rosemary

Preheat oven to 400 degrees.

In a small bowl, combine the mustard, honey, and 2 teaspoons of olive oil. Now, I use French’s Honey Dijon Mustard. You don’t have to use that obviously, lol, but I’ve made this recipe several times and have used several different types of mustard. It makes a difference. A huge difference. Certain brands have a certain taste and I find that French’s is the best for this recipe. But it’s up to you. *smile*

In a pan, add 1 teaspoon of olive oil. Add the onion, diced, and saute over medium heat until golden and tender, about five minutes. Add the minced garlic (which I use the stuff in a jar, not fresh) and saute for an additional 1 to 2 minutes, until fragrant.

Put onions in an oven safe dish and add the chicken on top. Salt and pepper the top of the chicken, if you wish. (I never do this. Hahaha. And it still tastes delicious.) Pour the honey mustard mixture on top of the chicken. Sprinkle rosemary on top of it all.

Bake the chicken for 20 minutes, covered. Then, remove the cover and baste the chicken with the sauce and continue to cook for an additional 20 to 30 minutes uncovered, (Depends on you oven. Seriously, they are all finicky.) or until the chicken is browned on top and cooked through.

Wah-lah! And now you have a delicious chicken meal. We had broccoli and mashed potatoes with ours and, mmm, mmm, good!
