Happy Thanksgiving!

Happy Thanksgiving, lovelies! Hope you all have a fabulous day filled with family, love, and lots of turkey! We have a tradition in my family when it comes to pies. We always have to have Grape Nut Pie, instead of the usual Pumpkin Pie (not a fan of pumpkin anyway lol). Not in all my stories, but in some of them, I like to incorporate favorite meals. So, if you have read my McCord Family Novel series, you’ll know the McCord men are a fan of pies. Austin, the middle brother, loves Grape Nut pie. It’s his favorite of all favorites. So in honor of Thanksgiving, I thought I’d share the recipe with you. In case you’re wondering what it tastes like, it’s kind of like Pecan Pie, but waaaaaaaay better! hahahaha

Grape Nut Pie

3/4 cup    Grape Nut cereal

1/2 cup    warm water

Mix these together in a small bowl and let soak.

3/4 cup    sugar

3               eggs, well beaten

1 cup        dark corn syrup

3 tbsp       melted butter

1 tbsp       vanilla

Dash of salt…but seriously, I never add this. lol

Mix these ingredients together in a medium bowl, then add the soaked grape nuts. You will need pie crust. You can make your own, or if you’re like me, I buy Pillsbury for easy convenience. Line a 9″ deep dish pie pan with your pie crust, then add mixture.

Bake at 350° degrees for 50 minutes. My oven is very temperamental so I like to check it after 30 minutes, then bake another 10-20 minutes, just to make sure I don’t overcook it. It’s done when the crust is a golden brown and the top looks hard. (Like the picture above, and I took the picture about a minute after it came out of the oven.)

And there you have it, Grape Nut Pie. The most delicious pie for Thanksgiving! If you bake one for Austin, he’ll be your friend for life! lol
